Fettuccine Calabrese

About an hour.

1/8th cup olive oil
1 cup Calabrese Salami, sliced n diced. Could use pepperoni.
1 1/2 cups sliced mushrooms
1/2cup pitted kalamata olives
1/2 cup semi dried tomatoes
2 cloves of garlic
1 can crushed tomatoes, or diced (400gram, about 14 ounces)
half a can of water
parsley to decorate

Saute calabrese in olive oil over low heat until oil starts to come out of the calabrese, say 5 minutes
add crushed garlic and mushrooms
saute 5 minutes
add crushed tomatoes.
add water, bring to boil then simmer on low for about 30 minutes, stirring occasionally.

(It will thicken and get nice and oily)
add chopped semi dried tomatoes and olives, cook further 15 minutes

Sprinkle with parsley and serve over pasta of your choice. (But if it's not fettuccine ...)
