What might prompt a tester to see if a kid has an odd power say to digest anything, if the kid has no cravings for it or did it.

Well, yeah, actually it goes for most powers -- you have to contrive a situation for the character to realize they have that power. Some are relatively easy, some demand quite a bit of creativity.

Omnidigestion would enable digesting all that normally undigestable fiber that baseline humans eat. So, you'd definitely notice changes in your poop, if you even have poop anymore (define "digest anything" -- is there any waste left over, and what about dead gut flora?). All that fiber (and whatever else) that you're suddenly able to digest is also going to mean that you're getting more calories out of your food, so unless your mutation also impacts your metabolism, you're probably going to have either a decrease in your appetite, a sudden weight gain, or diabetes. If your metabolism does get sped up, you're either going to be hyper or have a fever unless the extra energy is being used to power other abilities.
Point is, this ability would result in a noticeable change to how your body functions, which would give doctors a trail to follow leading them back to your weird digestion.

Ah, Tenzil Kem... when played right, he was extremely funny. I remember this issue from the "Five Year Gap" era of the Legion... there's a scene in which he is meeting someone in secret in a dive that is several hundred levels below a greasy spoon, and he is so disgusted by the food served there that he opts for eating the (full) ashtray instead. "I may be able to digest matter in all its forms, but even I have to draw the line somewhere."
