Question Hummus

  • A Little something I came up with when taking a little of this and that from a number of online recipes... was always a crowd favorite whenever I made it.

    Hummus

    3 cans garbonzo beans (chickpeas), drained
    1 cup Tahini (this takes a little tracking down but it’s worth it, if you can’t find you can leave out)
    1 head garlic, roasted in 1/4 cup olive oil (I separate the cloves and put them in a cup made of foil with the oil and roast in oven at 400 degrees)
    1/2 cup lemon juice
    1/2 cup liquid from beans (can use water)
    4 teaspoons salt
    1/2 teaspoon course ground pepper
    1/2 teaspoon red pepper flakes [optional]
    1 teaspoon Sriracha (hot sauce, Sriracha is the red bottle with the green cap that has the rooster on it. It’s found in the oriental section of the store) [optional]

    Blend in food processor and let sit (can refrigerate until needed)

    Before serving added 1/3 cup chopped parsley and a splash of lemon

    Top with paprika and a quick drizzle of olive oil

    My batch using these measurements was too large for home use. You may need to cut it or mix portions separately and stir together at end.

    If you mix separately make sure you use at least 1/3 of the liquid with each can of beans. If not you can add a little more liquid to each to make sure they blend smoothly.
