Question Colcanon (mashed potatoes with greens)

  • Another Irish dish I made for the potluck today, and another recipe I found online . The recipe I followed gave some wiggle room about the greens to be used, so I actually used more than one.

    This was a lot easier than I expected (I knew it was relatively straightforward, but it was even more so than I thought) and came out very well, if I do say so myself. I probably should have peeled the potatoes before boiling them, but it was easy enough to do after the fact (if a bit messier).

    The ingredients I used were:
    6 Yukon Gold potatoes, boiled and then peeled
    Salt
    8 Tbsp unsalted butter
    2 lightly packed cups each of curly kale and Savoy cabbage, chopped
    small bunch of parsley, chopped
    3 leeks
    6 chive stalks, minced
    3 green onions (including the green onion greens), minced (about 1/2 cup)
    1/2 cup each whole milk and heavy cream

    INSTRUCTIONS
    Boil the potatoes: Put the potatoes in a medium pot and cover with cold water by at least an inch. Add 2 tablespoons of salt, and bring to a boil. Boil until the potatoes are fork tender (15 to 20 minutes). Drain in a colander. I peeled them once the were cooled, but as I said, it would probably have gone smoother if I'd peeled them before boiling.

    Cook the greens and the green onions with butter: Return the pot to the stove and set over medium-high heat. Melt the butter in the pot and once it's hot, add the greens.

    Cook the greens for 3-4 minutes, or until they are wilted and have given off some of their water.

    Add the green onions and cook 1 minute more.

    Mash the potatoes with milk or cream, add greens: Pour in the milk or cream, mix well, and add the potatoes. Reduce the heat to medium.

    Use a fork or potato masher and mash the potatoes, mixing them up with the greens.

    Add salt to taste and serve hot, with a knob of butter in the center.

    While I didn't look for any until after the fact, here are a couple of videos on the dish. I didn't use bacon in this version, but many variations do use some bacon crumbles, as two of these videos all do. Sauteéing the greens versus parboiling them also seems to be one of those things that varies from recipe to recipe.
