I ended up finding this one more on accident, when I failed and overstuffed a pita wrap for lunch.
"Caesar" Spinach Pita Salad
What you need:
1-2 soft pitas (pocketed or pocketless both work)
6 ounces of baby spinach
shredded cheese (I used an Italian blend)
almond slices
1/3 to 1/2 cup Mayonnaise
2 tablespoons of milk (any kind), yogurt, or olive oil
dash of salt
pepper
Directions:
Tear the pita into small pieces and mix into the spinach
Mix the mayo with the salt and add either the milk, yogurt, or olive oil. Mix vigorously. Apply to the salad.
Dress with shredded cheese, almond slices, and pepper.
Serves 2-4
You can also toast the almonds, or include red onions or raisins. There's other ways to improve this recipe, but since I salvaged this from what was supposed to be soft wraps that had ruptured, I was pleasantly surprised that the pitas were better untoasted.
